Cooking Creamy Chicken Casserole

During this Paleo potluck, Juli Bauer demonstrates how to cook creamy chicken casserole.

“(I am) showing people how to make an easy Paleo meal and make it delicious,” says Bauer, who runs PaleOMG.com.

The ingredients: broccoli, cauliflower, olive oil, chicken thighs, garlic, white onion, vegetable broth, coconut milk, salt, pepper and mushrooms.

Bauer begins by roasting bite-sized pieces of broccoli and cauliflower in the oven at 400 F for 15 to 20 minutes.

“I’m trying to get a little bit of a char on them almost … . It gets it a little bit crisp because I’m going to put a sauce on it,” she explains.

Next she sears 3 lb. of chicken and begins the sauce with two minced garlic cloves, olive oil, diced onion, vegetable broth and two cans of coconut milk, adding salt and pepper to taste. Afterward, she dumps the sauce on top of the chicken and vegetables, adds mushrooms and cooks it all at 400 F for 15 minutes.

“I’ll let it sit so then the coconut milk can … soak up into the vegetables and the chicken, and then you can just kind of mash it around,” Bauer says.
